Tasmanian pepper leaf is a versatile and uniquely flavourful herb that is every bit as spicy as pepperberry! It can be used in a similar fashion to the berry and used as a replacement to conventional pepper. As with the berry the spicy component will be mellowed out with longer cooking times.
The aroma is pure Tassie bush itself! Fresh, herbal, crisp, slightly sweet menthol with a hint of vanilla that will have you reminiscing about those great hiking trips in the Tasmanian wilderness. Because of its amazing aroma pepper leaf is highly sought after by distillers.
Harvesting Tasmanian pepper leaf
Our pepper leaf is sourced from a property that we own in the mountainous regions of the Southern Midlands. We carefully select the trees we cut for leaf. We prefer male trees that have vigorous leaf growth. These trees are harvested every two to three years to allow trees time to recover. Semi-regular pruning appears to invigorate older trees and shapes them to a hedge-like appearance.
