Tasmanian pepper leaf is a versatile and uniquely flavourful herb that is every bit as spicy as pepperberry! It is fantastic in baking – bread, muffins or cookies. As for the berry the spicy component will be mellowed out with longer cooking times. Other uses might include and casseroles.

Harvesting Tasmanian Pepper
Most of our pepper leaf is sourced from a property that we manage in the Midlands. We carefully select the trees we cut for leaf. We prefer male trees that have vigorous leaf growth. These trees are harvested every two to three years to allow trees time to recover. Semi-regular pruning appears to invigorate older trees and shapes them to a hedge like appearance.
This versatile bushfood herb is an Australian success story; essential oils are already being widely produced and studies are underway to validate this food’s bush medicine qualities.
