Harvesting Tasmanian Pepper
Most of our pepper leaves are sourced from a property that we manage in the Midlands. Often we collect leaf in conjunction with pruning of older trees plants to reduce height or to stimulate new growth. Other trees dedicated to leaf production are shaped or hedged to facilitate easy cutting.
This versatile bushfood herb is an Australian success story; essential oils are already being widely produced and studies are underway to validate this food’s bush medicine qualities.
