Description
Tasmanian pepper leaf is a versatile and uniquely flavourful herb that we use almost daily in the kitchen. Casseroles, stir-fries, pasta dishes, baking…. Plus it adds a wonderful dimension to cookies!
The aroma is pure Tassie bush itself! Fresh, herbal, crisp, slightly sweet eucalyptus with a hint of vanilla that will have you reminiscing about those great hiking trips in the Tasmanian wilderness.
Then comes the subtle building peppery tingle which is so uniquely characteristic of Tasmanian Pepper.

Harvesting Tasmanian Pepper – Looking after our patch
Most of the pepper leaves are sourced through wild harvest and we harvest ourselves. That way we can select only flavourful leaves from healthy plants.
We wild harvest on the forgotten corners of farmland from the Tarkine through to Tasmania’s south east.
That includes natural bush areas such as shelter belts, paddock edges, gullies and other “non-productive” parts of the farm.
By paying the farmers royalties for what we harvest we are encouraging them to conserve the natural bush.
As most farmers appreciate, natural bush provides a boost to farm productivity by enriching the ecosystem, keeping pests in check, providing shelter for animals, lowering the water table, reducing salinity and reducing erosion.
Health Benefits
This versatile bushfood herb is an Australian success story; essential oils are already being widely produced and studies are underway to validate this food’s bush medicine qualities.
