This a great simple pizza recipe and one that shows off kunzea’s ability to shine through other strong flavours.
This recipe is light on detail – I’m just giving you guidelines. So straight into it! The ingredients are:
- pizza base x1
- smoked salmon – 50-80 grams
- red onion – I prefer caramelised with a pinch of sugar – one small onion
- cream cheese – 125g
- grated pizza cheese – mozzarella and parmesan blend is my favourite – one hand full
- kunzea, milled – 1 heaped tea spoon
Set the oven temperature to at least 250C. At this temperature you’ll need 10 minutes. Pizza ovens can be a lot hotter (400C) which will require a shorter cook time – 3 mins approximately.
Chop the red onion and caramelize in a pan – unless you prefer to use raw onion – which is ok too. A pinch of sugar into the pan helps add caramelised flavours.
Melt the cream cheese in a pan and add kunzea. A little pre heating helps draw out the flavours of kunzea. Melting the cream cheese is to help spread it over the pizza base. You don’t need to do this step – I just found it otherwise hard to spread without ripping my nice thin base! Note you could use sour cream instead of cream cheese.
Spread ingredients on top of base and into the oven. Et voila you have yourself a kunzea powered pizza!
