Leatherwood honey

Leatherwood honey is an extremely rare honey – it only exists in Tasmania where the Leatherwood tree grows! In Tasmania leatherwood distribution is limted to Tasmania’s central and west coast regions – deep within the old forests.  It takes leatherwood 70 years to reach maturity and to contribute to honey yield.  Therefore leatherwood honey always comes from undisturbed or at least relatively undisturbed forest.

Interestingly leatherwood plays a larger role in Tasmanian honey production because of the timing of its flowering.  Leatherwood flowers in late December / early January – a time when there is very little else flowering en masse in the Tasmanian wilderness.  Hence most commercial bees depend upon leatherwood for at least some of their life cycle.  On occasion helicopters have been used to move hives into remote areas of leatherwood trees!

Leatherwood honey aroma and flavour is as rare as the flowers from which they are sourced.  It has a complex floral aromatic and distinctive crisp flavour. Delightful! It is sought after by foodies across the globe.
